What do you cook when your daughter has struggled with Long Covid for almost two years?

In January 2022 my daughter contracted COVID. It took her almost 15 days to test negative. Within two weeks of initially recovering, she had gone from a 15-year-old who spent most of their free time training for the possibility of distant triathlons as COVID started to abate around the world, to a girl who was almost unable to walk more than 50m without the aid of a walking frame and for greater distances required a wheelchair. She has spent the last two years working through what was eventually diagnosed as LONG COVID.
